Caramelized Onions

C aramelized Onions are a treat because they very easy to make on one hand and yet difficult on the other. They are easy to make because all you have to do is boil finely sliced onions with caster sugar, butter and water till all the water boils off. The difficult part is to be over the pan when all the water has evaporated and make sure the caramelization is evenly done. As we know onions are sweet by themselves but the addition of sugar raises the taste to a whole new level. And the addition of a refined brandy makes it even better. T here are many orange marmalades. I can say that I have come up with the perfect taste for my liking. Orange marmalade is my favorite jam especially when spreading over salted butter on crunchy, hot, bread. Every year around this time I make a few jars of it to last us the whole year...

Remember The Condiment Oil We Made On July 22nd 2011??...

G ood morning everybody and Happy Thanksgiving. Today is a big and long day for most Families in the United States and abroad serving their country or working there. The greater part of the day will be spent in the kitchen preparing all those goodies and I come in to remind you of those condiment oils we prepared together on July 22nd 2011. I had put mine in the fridge, forgot about them and hadn't used any since. Well last night I opened them and the aroma from the oil from each was fantastic. You can use the rosemary olive oil for your salad today, or fill a lidded serving cup with the hot olive oil and chilies or use your basil oil in any of your preparations. So you have all these delicious oils, you can use in your cooking today and to spice up your pallets all through the holidays. Happy Holiday Season. Yey!!!! Stelio.

Roasted And Peeled Bell Peppers

T his is a delicious preparation to keep in your fridge for a quick tapas presentation to friends who, unexpectedly, came for drinks. These bell peppers are roasted in the oven, peeled, cut into thin strips, put into a an empty jar then covered in olive oil.

Pickled Anchovy (Gavros In Greek)

I went to the Central Fish Market of Athens the other day and had the pleasure of seeing a fantastic array of different kinds of fish, shell fish, big small shrimp, crabs,  huge calamari, small cuttlefish even sword fish. Fresh tuna starts next month. The moon is in the perfect position for good fishing. Anything your heart desires, if you have the money of course and space in your deep freeze. Having in mind to make pickled anchovies or what called in Greek, Gavros, bought 1 kg only because I knew the work that was awaiting me. I also found and bought a beautiful filet of salmon.  Sometimes I go there and come back empty handed because there would be nothing I liked. So I immediately put myself to work on my anchovies.  I always try to clean my fish as soon as I buy it. Once cleaned, either deep freeze or consume.

Y ou would want to save all the empty jars of pickles, mustard, mayo,  ketchup bottles, BBQ sauce bottles for some special sauces, condiments, preserves, marmalade made at home. 

Sour Cherry Marmalade (VĆ­ssino)...It's July!!

This is July and it calls for Sour Cherry Marmalade and Sour Cherry Syrup. They come and go so quickly that I made it a point to wait for them to appear, then wait for approximately another week for the price to go down, and finally after all those years I've been wanting to make Sour Cherry Marmalade, I succeded. I did not make the Syrup though...Don't need all that sugar!!
