White Rice With Pine Nuts.....Very Palestinian

Pine nuts are expensive but delicious when only slightly fried with good quality fresh butter. It gives a whole new dimension to a dish.
I would like to share with you a very easy, quick, and simple yet delicious and refined recipe which involves rice and pine nuts.
You will need:
Serves 6 as a side dish.
- A white rice made with 3 cups of normal rice.
-  Salt to taste.
-  3/4 cup pine nuts.
-  1 Tbsp. good quality fresh butter.
Method:
-  Make the white rice the way you usually cook it.
-  Melt the butter in a small pan on low heat, add the pine nuts and stir continuously until they take a light brown color. Do not stop stirring so as to give them a uniform brown color.
-  When rice is ready to be served, add the pine nuts over the rice together with the butter and mix.
Note:
  • Fry the pine nuts just before serving the rice to conserve their crunchy texture.
  • You can also use scalloped almonds, or hazel nuts instead of pine nuts if you wish.
Very tasty and different .
Enjoy
Stelio
