Time for Vegeterian...

Maybe it is time to eat something light for a change.
This recipe is included in the family of Greek, Vegetable-Olive Oil-Based dishes
Serves 4 as a main dish.
You need
-  1 kg of frozen artichoke hearts kept whole or cut in four quarters.
-  1/2 kg of frozen big peas
-  1/2 kg of frozen baby carrots.
-  1 Onion sliced very thin.
-  2 Cloves garlic cut very small
-  1 Medium leek thinly sliced
-  1 Big bunch of dill (Two full cups)cut very small.
-  1 1/2 Cups hot water with one Beef cube dissolved in it.
-  1 Chilli (to give the dish a little pep!)if you wish, cut up in very small pieces.
-  Olive Oil (prefer Greek extra virgin Kalamata Olive Oil)
-  No Salt (the boillon is salty enough), but use some pepper if you do not use the Chilli.
Method:
- Thaw and strain all vegetables
- Pour enough Olive Oil to cover the bottom of a large pan with a cover.
- Heat the oil until it is quite hot.
- Add in the sliced leek, onion, and garlic.
- Stir-fry the lot until they are soft.
- Add vegetables and stir-fry them for 2 minutes.
- Add the beef boillon water
- Add the chilli cut up in very small pieces.
- If Chilli is not used then add freshly ground pepper.
- Add the dill, stir to boiling.
- Cover pan, lower heat to minimum and simmer for about 20 minutes or untill carrots and artichokes are "al dente".
Please note that this dish can be eaten hot or cold, and can be eaten with meat, chicken, or fish on the side.
