Chicken Livers with Ouzo Flambé.......Splendid!!

This dish is served in fine restaurants in Greece. Greeks love it, even foreigners love it. So try it, you will love it!

You will need:
-  500 gms of fresh chicken livers the source of which you should trust. Roughly chop them.
 -  2 medium onions roughly chopped.
-  2 Tbsp. ouzo.
-  1/2 cup water.
-   3 bay leaves.
-  1 Tbsp. olive oil (prefer Greek extra virgin Kalamata olive oil.
-  Salt and pepper to taste.
Method:
-  Heat oil in skillet, add chopped onion and stir fry till they are soft.
-  Add chopped chicken livers and stir fry for 2 minutes on high heat.
-  Add Ouzo stir 10 seconds maximum and flambé.
-  Add water, bring to a boil and simmer for 5 minutes on low heat covered.
-  Add salt and pepper to taste.
Serve with white rice and a salad.
