Sauce No.13 for Pasta.......Special Tomato Sauce

Maybe it is time to share with you some more pasta sauces.
You will need;
Serves 4
-  500 gm of  canned tomato pieces in juice.
-  2 Tbsp. tomato paste.
-  1 medium onion chopped fine.
4 cloves garlic crushed and chopped fine.
2 inches ginger grated.
1 red sweet pepper (Florinis) chopped fine.
½ kg of mixed frozen mushrooms, thawed keeping the juices.
1 Tbsp. black olive paste.
-  Olive oil  (prefer Greek extra virgin Kalamata Olive Oil).
-  1/2 tsp. thyme.
-  1/2 tsp. cayenne pepper.
-   Salt + freshly ground black pepper.
-  Cover bottom of a sauce pan with oil. Heat.
-  Add the chopped onion, the garlic, the ginger, the red pepper, and stir for two minutes.
-  Add the frozen mushrooms and juice.
-  Add tomato paste, tomato pieces, olive paste,  thyme, and cayenne.
-  Simmer till sauce thickens to a desired consistency.
-  Add Salt and freshly ground pepper.
Serve with any pasta you wish and freshly grated cheese of your choice.
