Sauce No.10 for Pasta: Fresh Sardines/Back Olives/Capers/Sun Dried Tomatoes

This sauce is rich in Omega 3, good for your health, and is very tasty if, of course, you like fresh sardines.
You will need:
- 100 gms of rigatoni per person, 1 liter of water per 100 gms of pasta, boil
- 1.5 kg fresh sardines, no head, cleaned thoroughly, no back bone, cut in pieces.
- 10 – 15 pcs. sun dried tomatoes in olive oil, cut in small pieces.
- 1/2 cup sliced black olives
- 1/4 cup capers
- 1 clove of garlic per person crushed and cut very small.
- No Salt
- Freshly ground black pepper
- 1 small hot green chilli pepper thinly sliced
- 1 cup milk.
- 1 tsp. dried origano or 2 to 3 twigs fresh from your garden.
Method:
- Mix sun dried tomatoes, olives, capers, crushed garlic and Chili
- Stir fry the above mixture for about 2 minutes till the garlic aroma comes out.
- Add Sardines, and stir for 1 minute to get an even mixture.
- Add the milk.
- Cover and simmer for 10 minutes.
- Boil and strain rigatoni in serving dish, and pour sauce on top, spread and mix evenly.
