The First Pressure Cooker
"Denis Papin (22 August 1647 - c. 1712) was a French-born physicist, mathematician and inventor, best known for his pioneering invention of the steam digester, the forerunner of the steam engine and of the pressure cooker.
Papin invented the pressure cooker in 1679, but it took another 200 years to become a kitchen appliance.

A pressure cooker is an airtight cooking vessel that uses basic physical principles to cook food in a fraction of the ordinary time. Pressure cookers use the fact that water can be heated well above its normal boiling point if it's in a sealed container that keeps steam inside and allows steam pressure to build beyond normal atmospheric pressure. Pressure cookers consist of a base, interior steaming rack, locking lid, vent tube and pressure regulator.

The increased pressure inside the pot delays the water and/or other liquids inside the pot from boiling until it reaches a much higher temperature. As a result, the cooking process is sped up considerably. A pressure cooker works by building up pressure from steam in the pot, which cooks food at a very high temperature. My friends, I have never used the pressure cooker in any of my recipes in this blog because I have not shared with you any tough pieces of meat. Pressure cookers are usually used to cook cheaper and harder meats in a fraction of the time they cook on normal cooking. I use the pressure cooker to boil chicken (30 minutes instead of 40 to 50 minutes therefore we save on gas) and to boil certain cuts of meat which are tough to boil normally such as osso buco (Veal or beef shanks, brisket, etc).
Maria and I bought the pressure cooker you see in the pictures when we got married in 1981. It holds 10 liters and many a good meal has been cooked in it.
