Cranberry Bean Bake ....Texan/Italian Style

I bet you guys never had beans this way before. So hang on and you shall enjoy the ride.

Your will need:
-  250 gms of cranberry beans soaked overnight.
-  1 big onion cut into rings.
-  5 cloves of garlic finely chopped.
-  2 bay leaves.
-  A 30 gram flour bechamel sauce made with the equivalent quantity of butter and milk. Please check my Sauces list on the labels.
-  4 eggs separated.
-  Salt, pepper, nutmeg, for the bechamel.
-  1 tsp. thyme.
-  100 gms of cheese.
-   A baking dish.
-  Butter extra to butter the oven dish.
-  Fine bread crumbs to coat the inside of the baking dish.

-  Drain beans from their overnight water, rinse and drain.
-  Pour fresh water into the pot and cook beans till they are tender. Add, thyme, onion, garlic, salt and pepper.
-  Once tender, drain, and purée.
-  Make the béchamel, let cool.
-  Add Béchamel to the purée beans combine and mix well and let

-  Add one yolk at a time and stir,
-  Once finished, let stand while you beat the eggwhites into a stiff meringue.
-  Fold into the bechamel beans mixture.
-  Transfer to the prepared baking dish, place in another bigger baking  dish with hot water.
-  Add Béchamel to the purée beans combine and mix well and let c
-  Bake for 20 minutes without opening the oven door in a preheated oven at 200 C.
Bring out of the oven, let cool
Serve and enjoy with a salad!!
