Orzo With Cauliflower And Turkey Left Overs.

Orzo can be treated as rice. Some Mediterranean ways of cooking orzo or rice is by frying in olive oil or butter first till all the grains are coated  before adding the right amount of water, covering the pot, lowering the temperature to minimum and letting it cook for 20 minutes.....


Ingredients: for 4 

  • 2 cups left over turkey.
  • 500 gr orzo.
  • 1 litre water.
  • 1 cube concentrated porcini mushroom.
  • A handful dry porcini mushrooms.
  • 200 gr cauliflower florets including the finely chopped leaves growing out of the main stem. Nothing goes to waste.
  • 8 slices of Gouda square slices of cheese.
  • Salt and pepper to taste.
  • 1/4 cup olive oil.
Method:
  • Boil cube and porcini together in the litre of water.
  • Heat oil in a Karahi or Wok or any large pan with high sides on high heat.
  • Add left over turkey and stir fry for a couple of minutes.
  • Add cauliflower florets etc. and stir fry together with turkey.
  • Add orzo and mix and stir fry as well with the rest of the stuff.
  • Finally add the boiling porcini water.
  • Mix well cover, and simmer at lowest temperature for 20 minutes.
  • When time is up, turn off heat, lift cover and add in quickly the eight slices of cheese to cover the surface.
  • Replace cover and let the cheese melt till you serve.
This is a one dish meal.
