O f course you know that there is no such thing as gluten free unless it is made in a 100% gluten free environment. This means that the whole kitchen, work surface, knives and utensils used must be spotlessly clean from any product with gluten in it. Do you know how I came about getting to know this info?? The other day I was watching a TV commercial about Gluten Free Ham!! Gees I said how can you have Gluten free ham?? So I searched and asked and here is what I came up with. Gluten is very transmissible. It will contaminate anything coming in touch with it. Therefore people who have serious problems with Celiac disease must be careful......

The recipe I am about to propose is very well known in the English speaking parts of the world where St. Patrick's Day, March 17th, is celebrated.  It may however, not be so well known in other parts of the universe. Checking my readers' statistics I see that China and the Ukraine come second and third (the U.S. are always the first and I sure thank ya'll!!) Irish Soda Bread is fantastic and a quick way to make bread especially when the supermarket you usually go to, is the only one in the area where you live, does not have any fresh yeast. You would say:" buy dry yeast or ready made bread", well I am against it. I prefer home made bread and I don't know how to use dry yeast! This recipe is definitely not my own. I have read around the Internet and obtained a very good recipe which was a success immediately on St. Pat's day of this year. It may have been beginner's luck, I don't know. Home Made Spelt (Zeas In Greek) Bread.

  I t's great to have an automatic or semi-automatic bread making machine at home. You can make your own bread according to your specifications....no salt....no sugar....you can choose the flour you want etc. Needless to say it takes some experimentation to do so.  You must have the patience and time, these are two things I have plenty of. I bought myself a bread making machine which has its book of recipes but I had to do some changes.... I am now presenting you with a "Fait Accompli" just in case you a bread machine. By the way it is a De Longhi which can be switched to a mini oven when needed.

T oday I am thinking of sharing with you a Betty Crocker southern style corn bread recipe twisted to suit Mediterranean pallets. I plan to use sun-dried tomatoes and green olives instead of corn, milk instead of buttermilk. Greeks are not yet used to buttermilk, parmesan cheese and 1 tsp. baking soda instead of ½. It goes like this....

  Y ou have already enjoyed one recipe on how to make Focaccia on my April 14th 2011 recipe. Well this recipe is exactly the same except at the moment when you finished kneading the dough and it has wrapped itself around the mixer’s hook, you untangle the dough, make into a ball, put it back in the bowl and stick it in the microwave, lock the door,  and forget it for 1 ½ hours. I Chose To Add Roasted Sesame Seeds. You Could Add Anything Else You Wish.

B y Maria: As bread is holy, it would be a sin to throw it away when it is stale and old so we have to either buy what we can actually eat in order to renew every day, or if there is a forgotten piece we ought to think of something to do with it.  we can either put it in the oven and dehydrate it completely, or cut it in cubes and use it in a sweet. My mom gave me the following recipe:

A Focaccia F ocaccia is a typical Italian type of bread similar to pizza but using a filling as opposed to topping. It is bread with yeast. It can be made with whatever type of flour and filling you want.  The focaccia recipe I would like to share with you today is with all purpose flour and a filling made up of pitted sliced black olives, capers, oregano, chili pepper, sun dried tomatoes, garlic and oil.
